Vegetable Brie Strata


Parade

Pella — 1 onion, sliced

1 red bell pepper, diced

1 green bell pepper, diced

2 Tbsp oil

1/8 tsp salt

1 (8-oz) round brie, cut into small cubes (rind removed)

5 cups sourdough bread, cubed

8 eggs

3 cups milk

1 1/2 Tbsp dijon mustard

1 tsp Italian seasoning

1/2 tsp salt

1/2 tsp black pepper

1. Grease a 9 X13-inch baking pan. In a skillet heat oil and add onions, red and green peppers and saute until soft. Add 1/8 tsp salt.

2. In baking dish layer bread, vegetable mixture and brie.

3. In a large bowl, whisk eggs, milk, mustard, Italian seasoning, 1/2 tsp salt and pepper. Pour over bread mixture.

4. Chill overnight. Bake at 350F for 45 to 50 minutes.

Serves 6.
