Fall is now upon us, which means cooler air, falling leaves and great fall foods. The fall harvest brings produce like squash, pumpkins and apples, which are all locally grown and have so much potential. Apples and pumpkins can do almost anything. Bake them into breads, pies and my personal favorite, apple crisp.
Squash is something a little more foreign but can also be used in many ways. Spaghetti squash holds true to its name, roast it in the oven, or even in the microwave, until the middle is soft. Then take a fork and scrape the middle out, As you do this the flesh will come out stringy, just like spaghetti. Use it in any pasta dish. Not only does it taste great, but it is also a healthy choice. By using squash instead of pasta you remove a carbohydrate and replace it with a vegetable, which will save you some of your normal winter inches! Squash doesn’t stop there, there are many variations and things to do with it, like make soup, cream sauces or side dishes.
Now that it’s officially fall, head to the local orchards, stock up on your fall produce and start creating traditional and newer fall creations!
